Szegedin Goulash

Hungarian Szeged goulash

Recipe: Szegedin Goulash

Szegedin Goulash is typical Hungarian cuisine. The hearty stew is both tasty and easy to prepare. The pork can be substituted with beef or lamb.

Ingredients for 4 servings.

1 Kilo lean pork (ideally from the loin or shoulder)

½ kilo sauerkraut

4 onions

5 tomatoes

2 red peppers

250 grams sour cream

2 tsp. Hungarian sweet paprika

1 tsp. cumin

Clarified butter

¼ l water

salt

pepper

Heat clarified butter in a large pot. Finely chop onions, tomatoes and peppers and sauté in the hot butter. Cut meat into cubes of approx. two cm thickness, add to vegetables and fry till golden brown. Season with salt, pepper and cumin and add some water. Cover and simmer for 1.5 hours on a low flame. Then season with paprika powder, fold in sauerkraut and let sit for a few minutes. Finally, add sour cream. Serve with white bread or boiled potatoes.
