One of the most celebrated chefs in France has caused a stir by taking meat off the menu at his three-Michelin-star restaurant in Paris. It could be seen as a brave - even reckless - move in a country that has a special attachment to eating not only eating meat, but also animal parts that people in other countries wouldn't dream of consuming.
